Tomato and bean salad with feta
For 4 persons
250 g black beans (cooked, tin)
80 g dandelion salad (alternatively rocket)
200 g feta cheese (possibly marinated with herbs)
2 tablespoons lemon juice
3 tablespoons maple syrup
8 tbsp olive oil
800 g mixed tomatoes
4 twigs of red basil (alternatively green basil)
salt, black pepper
Rinse beans over a sieve and drain well. Clean dandelions and pluck into bite-sized pieces. Cut cheese into slices. For the dressing, whisk lemon juice with maple syrup and olive oil. Season with salt and pepper.
Slice or quarter large tomatoes. Cut small tomatoes in half. Mix the tomatoes with the beans, dandelion and dressing. Arrange in a bowl. Pluck basil leaves from the twigs and spread on top. Serve with the cheese and possibly Simit (see tip).
TIP: Simit (Turkish sesame rings) go well with it
